Food For Thought: Crockpot Chicken Tacos

Sorry I have been a bit out of touch this week...it has been crazy around here!!  It started as one of those weeks when I thought is it Friday yet, then it was like oh poo it is Friday already!!  When the weeks lean toward the crazy busy, I love to whip out the crockpot.  This week was no exception, so I searched the pantry and freezer and found some yummy ingredients to make chicken tacos.  Another thing I love about this meal is LEFTOVERS!!!




INGREDIENTS:

5 Chicken Breasts (Frozen)
1 Packet of Taco Seasoning
1 1/2 tsp Parsley
1 1/2 tsp Onion Powder
1 tsp Garlic Powder
1 Can (14.5 oz) Chicken Broth
Salt & Pepper

Add the chicken broth and all seasonings to the crockpot.  Add the chicken, then sprinkle with salt and pepper.  Cook on high for 4 hours.




After 4 hours, shred chicken with fork or use a kitchen aid mixer to shred.  Let chicken cook for about 30 minutes more or until your tummy can't take it anymore!




Once chicken is ready, it is time to assemble your taco.  For this meal, we went with crunchy tacos...we were living on the edge I know!




For the next night, we spiced it up and went the tostada route with home-made tostadas.
