Food For Thought: Creamy Ranch Chicken and Mushrooms

There is something about a simple and delicious home cooked meal, especially when both your kiddos eat all their food including the steamed veggies!!  Score one for Mom...at least this time!


The chicken might not look the prettiest, but I am telling you my kids cleaned their plates!!  I kinda made this meal up so my super creative name for it pretty much says it all.

Creamy Ranch Chicken and Mushrooms Ingredients:

6 Chicken Breasts
1 Can Cream of Mushroom soup
1 Packet Ranch Salad Dressing & Seasoning Mix
1/2 Cup Milk
1 1/2 Cup Fresh Mushrooms, coarsely chopped or 1 Can of Mushrooms
Salt and Pepper

Preheat the oven to 350°F.  Place the chicken in a 9x12 baking dish and salt and pepper the chicken.  In a mixing bowl, combine the soup, milk, ranch seasoning mix, and mushrooms.  Pour the mixture over the chicken and bake uncovered for 45 - 50 minutes.

Parmesan Mashed Potatoes Ingredients:

6 - 8 Large Potatoes
4 Tbsp Unsalted Butter
1/2 - 3/4 Cup Milk
1 Cup Fresh Parmesan, grated
Salt and Pepper to taste

While the chicken is cooking, bring water to a boil in a large pot for the potatoes.  Peel and chop the potatoes and place in boiling water.  Cook until potatoes are soft for mashing, drain potatoes.  Combine drained potatoes, milk, butter, parmesan and salt and pepper in a mixing bowl.  Using electric mixer or kitchen aid mixer, mash the potatoes until desired consistency.



I also served the chicken and mashed potatoes with steamed veggies.  I sprinkled some olive oil and 1 tsp of garlic salt with parsley on the steamed veggies.  It was all so yummy in our tummies and we have leftovers!!!
