Ingredients (4 sandwiches):
1 - 2 large beefsteak tomatoes
8 slices of fresh mozzarella (or more)
3 tablespoons of butter
3 - 4 tablespoons of basil pesto
8 slices of sourdough bread
While the griddle or frying pan is heating up, butter both sides of the bread. Place the bread on the pan and toast, then flip bread to toast the other side. Spread basil pesto on each slice that was just toasted. Place the fresh mozzarella on one slice and then top with your slices of tomato. Place the other slice of bread on top. Once cheese has slightly melted and bread is toasted, serve and enjoy!!
In the past few weeks, we have already had this sandwich three times and I have plans for more in my near future!! If might add some prosciutto next time!!
